Serves 2
Ingredients:
one pack of SlimPasta spaghetti noodles (also known as Konjac or Shirataki noodles) or rice noodles
1 punnet of cherry tomatoes
1/2 tbs french capers, chopped
1/4 cup fresh parsley, finely chopped
1/4 cup olive oil, or you can substitute vegetable stock
1/2 onion, red or white, finely chopped
150g green Sicilian olives, pitted and chopped
1/4 tsp oregano
1 clove of garlic, minced
In a bowl mix the cherry tomatoes, capers, parsley, olive oil, onion, olives, oregano and garlic. Cover and put in the fridge overnight. On the day you are serving - cook your noodles according to the packet instructions, drain and mix in the bowl with the sauce. Let sit for 30 minutes and serve.
